Кухонные ножи Mikov RUBY

Mikov RUBY — Premium Kitchen Knife Series
RUBY is the top kitchen line from Czech manufacturer Mikov. It is designed for professional cooks and for home cooks who cook often and expect a lot from their knives. Every knife in the series shares the same design and construction, so you can build a matching set in one go or add knives one at a time. This section offers 10+ items: individual knives and ready-made RUBY sets.
What sets RUBY apart
- 55 HRC steel. The blades are made from quality stainless steel hardened to 55 HRC. It holds its edge well in daily use, yet is easy to touch up with a honing steel or sharpen at home without special equipment.
- Wooden handles. The ergonomic shape sits comfortably in the palm, and the wood feels pleasant and secure in the hand.
- Solid bolster. The metal bolster between handle and blade keeps your fingers from slipping onto the edge. It also moves the centre of gravity towards your hand, so the knife feels balanced even during long prep sessions.
- Seamless handle-to-blade joint. There are no gaps where food residue can build up, which matters for kitchen hygiene.
Models in the series
The range covers every core kitchen task:
- 400-ND-20 chef's knife with a 20 cm blade — the main workhorse;
- 405-ND-18 santoku — for straight up-and-down chopping;
- 401-ND-20 bread knife with a serrated edge — for bread, pastry and sponge cakes;
- 404-ND-20 slicing knife — for even slices of roast meat, ham and fish;
- 402-ND-18 boning knife — for taking meat off the bone and trimming membranes;
- 403-ND-13 utility knife — a mid-size blade for cheese, vegetables and small jobs;

RUBY sets
If you're starting from scratch or looking for a gift, a ready-made set is the easiest option. The RUBY Chef set combines a chef's knife, santoku, boning, utility and fruit knife. RUBY Party includes a chef's knife plus three small knives for vegetables, fruit and peeling. RUBY Steak is four steak knives for the table. There is also a set with a sharpening steel so you can keep the edge from day one. More Mikov sets are in the Knife sets section.
RUBY or CLASSIC?
Both series are made by Mikov; the difference is purpose. RUBY is the choice when balance, feel and looks matter: for a home kitchen where knives are on display, or for a cook who uses a knife for hours. The CLASSIC series is simpler: mostly plastic handles, lighter construction and practicality first. All kitchen models from both series are in Mikov Kitchen Knives.
Caring for RUBY knives
- Wash by hand in warm water and dry straight away. A dishwasher damages both the edge and the wooden handle.
- Don't leave the knife in the sink or soaking; prolonged moisture dries out and cracks the wood.
- Treat the handle occasionally with food-grade mineral oil to keep the wood from drying out.
- Keep the edge in shape with a sharpening steel and cut on wooden or plastic boards.

FAQ
What does 55 HRC hardness mean?
It is the steel's hardness on the Rockwell scale. 55 HRC is a practical balance: the blade holds its edge well without being brittle, and it is easy to hone.
What is a bolster for?
A bolster is the metal collar between blade and handle. It stops your fingers from slipping onto the edge and improves the knife's balance.
Can RUBY knives go in the dishwasher?
No. The wooden handle doesn't tolerate hot water and harsh detergents, and the edge dulls faster. Wash by hand.
