Mikov CLASSIC Kitchen Knives

Mikov CLASSIC — Practical Everyday Kitchen Knives
CLASSIC is the traditional kitchen series from Czech manufacturer Mikov. It is designed for everyday home cooking, when knives are in use every day: chopping vegetables for soup, jointing a chicken, slicing bread for breakfast. This section offers 10+ items: individual task-specific knives and ready-made sets.
Series features
- 53–55 HRC stainless steel. According to the manufacturer, this hardness gives the best balance between edge retention and ease of sharpening. The knife doesn't dull with every cut, and you can restore the edge at home with a honing steel or whetstone.
- Ergonomic plastic handles. The durable plastic doesn't mind moisture, doesn't absorb odours and is easy to clean. The shape gives a secure grip even with wet hands.
- Simple, purposeful shapes. Each knife is made for a specific job, so you can build a set around your own kitchen without paying for pieces you don't need.
Models in the series
- 73-NH-21 chef's knife with a 21 cm blade — the main knife for vegetables, meat and herbs.
- 74-NH-16 santoku — a shorter, wider blade for straight up-and-down chopping.
- 57-NH-18/Z bread knife — its serrated edge cuts through crust without squashing the crumb.
- 31-NH-11 utility knife in two versions: the wide one gives a steadier cut, the narrow one is handier for thin slicing and in-hand work.
- 33-NH-15 boning knife — for taking meat off the bone and trimming membranes.
- 52-NH-10 vegetable and 52-NH-8 paring knives — small, nimble knives for fruit and vegetables.
- 34-ND-11 cheese knife — the only model in the series with a wooden handle.
CLASSIC sets
The START set includes five kitchen knives and is an easy way to equip a new kitchen in one go. The BUTCHER set with a sharpening steel suits anyone who works with meat regularly. For heavier work on large cuts, see also Mikov butcher knives. All the brand's sets are in the Knife sets section.
Who CLASSIC is for
People choose this series for a first kitchen of their own, a holiday cottage, an office kitchen or a small café, anywhere knives work hard and need to be easy to look after. It also makes a safe, practical gift. If wooden handles, a bolster and a sense of heft matter more to you, compare CLASSIC with the premium RUBY series. Both lines are in Mikov Kitchen Knives.
Care
- Wash by hand. The plastic handle can take a dishwasher, but hot water and harsh detergents dull the edge faster.
- Hone the blade on a sharpening steel before use, and you'll need full sharpening much less often.
- Cut on wooden or plastic boards, not glass or stone.
- Store knives in a block or on a magnetic strip so the blades don't knock against other utensils.

FAQ
What does 53–55 HRC mean?
It is the steel's hardness on the Rockwell scale. In this range the blade holds its edge well yet is easy to hone and sharpen at home.
Wide or narrow utility knife?
The wide 31-NH-11 is better for cutting on a board, because the blade is stable and doesn't wander. The narrow version suits thin slicing and in-hand tasks such as peeling, scoring and trimming.
How does CLASSIC differ from RUBY?
CLASSIC is a practical series with plastic handles and 53–55 HRC steel. RUBY is the premium line with wooden handles, a solid bolster and 55 HRC steel.
