Mikov LUX PROFI — Butcher Knives with Rosewood Handles

LUX PROFI is the top butcher series from Czech manufacturer Mikov. The manufacturer designed it both for demanding professional operations and for processing meat at home. The series pairs proven boning and portioning blade shapes with natural rosewood handles. These knives suit people who work with meat regularly and want a tool that feels as good in the hand as it looks.

Steel and handles

  • 425 stainless steel, 53–56 HRC. The manufacturer highlights excellent cutting performance and edge retention for this series. That hardness keeps the blade sharp through meat, fat and sinew, while the edge is still easy to realign with a honing steel.
  • Rosewood handles. The dense tropical wood has a striking grain and feels warm in the hand. The ergonomic shape gives a secure grip, comfort and stability even during long, intensive work.

Models in the series

  • 310-ND-12 boning knife with a 12 cm straight blade. Short and stiff, for taking meat off the bone and trimming membranes and sinew.
  • 307-ND-16 and 307-ND-18 portioning knives with 16 and 18 cm straight blades. For cutting meat into portions and even pieces in one smooth stroke.
  • 304-ND-15 sticking knife with a 15 cm blade and a sharp point. For piercing and deep, precise cuts.

Building a set

The basic pair for meat processing is the 12 cm boning knife plus a portioning knife. The 16 cm portioning knife is more manoeuvrable on smaller cuts and poultry, while the 18 cm suits large primals. If you also need a curved boning knife, a block knife or a cleaver, you'll find them in the CLASSIC series. All models are in Mikov Butcher Knives.

LUX PROFI or CLASSIC?

Blade shapes are the same in both series; the difference is the handle and the intended setting. LUX PROFI with rosewood is chosen for home use, farms, small smokehouses or workshops, where feel in the hand and a durable, good-looking tool matter. CLASSIC with plastic handles is the better fit for plants with strict hygiene rules and very frequent washing. If you're looking for kitchen knives with wooden handles, take a look at the RUBY series.

Caring for rosewood-handled knives

  • Wash by hand straight after use and dry thoroughly. Don't leave the knife soaking and don't put it in a dishwasher.
  • Treat the handle occasionally with food-grade mineral oil to stop the wood drying out.
  • Hone the edge on a sharpening steel before and during work, and you'll need full sharpening much less often.
  • Store knives on a magnetic holder or in sheaths so the edge doesn't touch other tools.

FAQ

What do 425 steel and 53–56 HRC mean?
425 is the stainless steel Mikov uses for this series, and 53–56 HRC is its hardness on the Rockwell scale. This range is a good balance: the blade holds its edge well without being brittle and is easy to hone.

Is a wooden handle hygienic?
Rosewood is a dense wood, and with proper care it serves well for home use and small workshops. Plants with strict hygiene standards usually choose the plastic-handled CLASSIC series.

Which portioning knife: 16 or 18 cm?
16 cm is handier for smaller cuts, poultry and precise work. 18 cm suits large primals, when you want to cut through in a single stroke.
